This murukku has a sweet flavour with the addition of coconut milk. It has urad daal instead of chickpea flour so it tastes different from the other murukkus.
INGREDIENTS
Makes: Around 150 gms

1 Cup coconut milk
1 Cup rice flour
¼ Cup roasted urad daal powder
1 Tbsp sesame seeds
¼ Tsp asafoetida
2 Tbsp butter
Salt
METHOD
1. Sieve the flours with salt.
2. Add the sesame seeds and asafoetida and the butter and combine well till the butter is thoroughly mixed into the flour.
3. Add the coconut milk, a little at a time and combine to form a soft pillowy dough.
4. Fill the murukku mould and make small murukkus and fry.
5. Enjoy hot and crispy and store the rest in an airtight containe

1 Cup chickpea/besan flour
½ Cup rice flour
1 Tbsp warm melted butter
¼ Tsp asafoetida
1 Tsp crushed black pepper
½ Tsp cumin
¼ Tsp turmeric powder
METHOD
1. Sieve the flours, mix all the ingredients together.
2. Add water by sprinkling a little at a time and bring it together to for a sticky dough.
3. Oil the murukku press and use the plate with large holes.
4. Add the dough till it reaches half the press and pipe it into hot oil. Fry and enjoy hot or keep stored in an airtight container once cooled.

¼ Cup roasted chickpea flour
1 Tbsp mixed sesame seeds
¼ Tsp asafoetida
1 Tbsp butter
½ Tsp chilli powder
Hot water
Salt
METHOD
1. Sieve the flour with salt.
2. Add the asafoetida, chilli powder and sesame seeds.
3. Crumble the butter in to mix into flour thoroughly.
4. Add hot water a little at a time to make a smooth firm dough ball.
5. Fill the murukku maker and pipe into the back of a slotted spoon or an oiled banana leaf and carefully transfer to the oil after securing the end.
6. PS: Keep the dough covered with a moist kitchen towel even while making the murukku so it doesn’t dry out.
7. Enjoy hot and crispy and store the rest in an airtight container.

1 Tsp grated coconut
1 Tsp sesame seeds

METHOD
1. Sieve all the flours together with salt.
2. Add all the ingredients and mix in the butter well
3. Add hot water, a little at a time to bring together to form a soft pliable dough.
4. Cover with a damp cloth.
5. Oil the murukku maker. Fit it with flat slits plate and pipe the pakoda into hot oil.
6. Enjoy with a cup of hot tea.
