Ultra Mixer Grinder’s guide to making healthy dairy-free milk
Cow’s milk is a rich source of protein, vitamins and minerals. However, lactose in cow’s milk is sometimes difficult to digest and increasing number of people are now becoming lactose intolerant. In olden times, desserts like kheer were made with the milk of almonds and pistachios. Nut milk as a concept, while relatively new to the western world, has been a part of the Indian traditional cooking for centuries.
Nuts are a great source of energy, fibre and protein. They are a rich source of vitamins and minerals including magnesium and vitamin E. The fats in the nuts are mostly monounsaturated fats, omega-3 and omega-6 polyunsaturated fats. With very little saturated fats, nuts are very heathy and nutritious.
Making nutritious and delicious nut milk is fairly simple. You can make milk from cashews, almonds, pistachios, hazelnuts, almost anything.
ALMOND NUT MILK
INGREDIENTS
Makes 2 Glasses
Soak overnight
20 MINS
1 Cup of almonds (with skin)
4 Cups of water
METHOD
1. Soak the almonds overnight in 2 cups of water.
2. Discard the water, rinse thoroughly and drain.
3. Add the soaked almonds, the remaining 2 cups of water and blitz in your Ultra Mixer Grinder
4. Strain in a fine sieve or muslin cloth and enjoy fresh and nutritious almond nut milk.
5. Add this to your oats, cereal or enjoy as a refreshing drink.
Tip: Retain the coarse bits from the sieve to make cookies or add to breakfast cereal, salads or curries.
CASHEW NUT MILK WITH DATE CARAMEL
INGREDIENTS
Makes 2 Glasses
Soak 2 hrs
20 MINS
1 Cup cashew
1-2 tbsp of date caramel
2 cups of water
METHOD
1. Soak the cashews in 2 cups of water
2. Add it with the rest of the ingredients and blitz in your Ultra Mixer Grinder
3. Run it through a sieve or muslin cloth and enjoy a fresh glass of cashew nut milk
4. Add this to your oats or cereal for a delicious breakfast.
Tip: Retain the coarse bits from the sieve to make cookies or add to breakfast oats, salads or curries.
HAZELNUT CHOCOLATE MILK
INGREDIENTS
Makes 2 Glasses
Soak overnight
20 MINS
1 cup hazelnuts
4 squares of homemade chocolate
4 cups water
METHOD
1. Soak the hazelnuts overnight in 2 cups of water.
2. Discard the water, rinse thoroughly and drain.
3. Add the hazelnuts, the homemade chocolate, the remaining 2 cups of water and blitz in your Ultra Mixer Grinder
4. Strain in a fine sieve or muslin cloth and enjoy fresh and nutritious chocolate hazelnut milk.
5. Add this to your oats, cereal or enjoy as a refreshing drink.
